Chuy's is a full-service restaurant concept offering authentic, high-quality Mexican food. Founded in Austin, Texas in 1982 by Mike Young and John Zapp, Chuy's restaurants have a common decor, but each location is unique in format, offering an "unchained" look and feel, as expressed by their motto "If you've seen one Chuy's, you've seen one Chuy's!" Chuy's has an upbeat, funky, eclectic, somewhat irreverent atmosphere, offering large portions of made-from-scratch, Tex Mex inspired dishes.
Chuy's core menu was established using authentic recipes from family and friends of their founders, and has remained relatively unchanged over the years. They offer the same menu during lunch and dinner, which includes enchiladas, fajitas, tacos, burritos, combination platters and daily specials, complemented by a variety of appetizers, soups and salads. Each of the restaurants also offers a variety of authentic, homemade sauces, including the signature Hatch green chile and creamy jalapeƱo sauces, all of which are made from scratch daily in each restaurant. These sauces are a key element of Chuy's offering and provide the customers with an added ability to customize their orders.
With only three out of 49 menu items priced over $10.00, Chuy's seeks to be affordable to all diners. Chuy's offers a full-service bar in all of their restaurants, featuring specialty cocktails. For the twelve months ended March 27, 2011, alcoholic beverages constituted 19.8% of Chuy's total restaurant sales.
Chuy's has grown from eight locations as of December 31, 2007 to 27 locations as of June 26, 2011. Chuy's plans to open an additional four restaurants by the end of the year.
